  4. Prepare 3-4 of cloves.

  7. Prepare 1 inch of piece of cinnamon.
  8. You need to prepare 1 tsp of black cumin seeds.
  9. You need to prepare 1 1/2 cups of thick curd.
  10. Prepare 1 cup of fried onion.
  11. You need to prepare To taste of Salt.
  12. Prepare 1 tsp of red chilli powder.
  13. You need to prepare 1/2 tsp of turmeric powder.
  14. Prepare 2 tbsp of ginger garlic paste.
  15. Prepare 1 inch of piece ginger cut into thin strips.
  16. You need to prepare 2 tbsp of ghee.
  17. You need to prepare 2 tsp of garam masala powder to sprinkle.
  18. You need to prepare 1/4 tsp of cardamom powder to sprinkle.
  19. Prepare 2 tbsp of coriander leaves finely chopped.
  20. You need to prepare 22-26 of fresh mint leaves.
  21. You need to prepare 5-6 of strands of saffron.

  23. Prepare 2 tsp of rose water.

Jackfruit biriyani directions

  1. Heat sufficient oil in a pan and deep fry the jackfruit pieces until they turn a light brown in colour.
  2. Heat water in a non-stick pan and add bay leaves, green and brown cardamom, cloves, cinnamon and black cumin.
  3. Now, add the rice and enough salt and bring to a boil and cook until the rice is half done.
  4. Drain the rice and keep aside.
  5. In a deep bottomed non-stick pan, mix yogurt, ¾ cup fried onions, red chilli powder, turmeric powder, ginger strips, green chillies, ginger garlic paste, salt, 1 tbsp ghee, fried jackfruit, and 1 tsp garam masala powder.
  6. Add 1 tsp cardamom powder, 1 tbsp coriander leaves and 8-10 mint leaves and mix well.
  7. Add ¼ cup of boiling water and mix well.
  8. Mix the saffron with 2 tsp boiling water, 2 tsp milk and 2 tsp rose water Take half the cooked rice and spread it over the yogurt mixture. Sprinkle a pinch of garam masala powder and green cardamom powder each.
  9. Add 7-8 mint leaves, coriander leaves, the remaining fried onion, ghee and ½ of the prepared saffron milk.
  10. Strain the remaining rice and spread it over the added layer..
  11. Strew 7-8 mint leaves and the remaining saffron milk over the rice layer..
  12. Add some ghee. Cover and cook on high heat for first 2 minutes. Then lower the heat and cook for 12-15 minutes till the rice is done. Transfer into a serving bowl and serve hot..
