Ladybirds Pomegranate Pouched Pears and Apples with Pomegranate Sparkling . step by step

1. Peel the pears and apples leaving whole with stems in tact or you can core them if desired ..
2. Place the other cup of sparking or riesling into a medium saucepan and add the other cup and a half of the Pomegranate juice to the saucepan and add half cup of Pomegranate seeds to the saucepan and mix well to combine ..
3. place prepared pears and apples on their sides into the liquid in the saucepan and bring to the high simmer over medium to high heat to, cover and reduce heat to a low and simmer gently until pears and apples are tender when peaced with the tip of a sharp knife , turning gently once or twice as they cook to ensure even cooking and colouring , about 30-45 minutes ..
4. Once cooked. remove from liquid with slotted spoon and place in a bowl and set aside to cool and till needed . now add the caster sugar to the remaining liquid in the saucepan and stir till completely dissolved now boil on high heat until sauce is reduced to about half cup of liquid , about 15-20 minutes , remove from heat and pour through a sieve to remove the seeds and only keep the syrup ..
5. Place one cup of the sparkling wine or riesling into a bowl and add half cup of the Pomegranate juice with a small handful of the Pomegranate seeds and stir with a spoon to combine , let it rest a minute then pour into individual wine glasses , top with a choc mint sprig and serve with pouched pears and apples ..
