- Prepare 1/4 of Cucumber.

Goats Cheese Roasted Tomato Pepper Salad directions
- Pre-heat oven to 190°.
- Once heated, put the red pepper half into an oiled roasting tin face down. Drizzle with oil and season with salt and pepper and pop into the oven for 5 minutes.
- Slice your cherry tomatoes into halves.
- After 5 minutes, remove the tin from the oven and add the tomato halves face down and drizzle with a little oil. Pop back into the oven for another 10-15 minutes.
- Add the leaves to a salad bowl.
- Dice the Cucumber into small segments and add to the bowl.
