  5. Prepare 3-4 of Spring Onions.
  6. Prepare 1/4 of Cucumber.
  7. You need to prepare of Green Pesto.
  8. Prepare of Olive oil.

  1. Pre-heat oven to 190°.
  2. Once heated, put the red pepper half into an oiled roasting tin face down. Drizzle with oil and season with salt and pepper and pop into the oven for 5 minutes.
  3. Slice your cherry tomatoes into halves.
  4. After 5 minutes, remove the tin from the oven and add the tomato halves face down and drizzle with a little oil. Pop back into the oven for another 10-15 minutes.
  5. Add the leaves to a salad bowl.
  6. Dice the Cucumber into small segments and add to the bowl.
  7. Finely dice the spring onions and add to the bowl.
